Chitches

I alway's liked Chitches Pizza. We used to stop in quite often for there sausage pie and a friendly chat with "Chick" at the bar. The pie was on the small side but very good along with a glass of Birch Beer !!

Chitch's is still the tastiest an most unique. I have it imported to Fla. whenever someone is coming down!!  Even day old is better than none.  It is right up there with a roast beef sub from Lou's!!!

I have to agree with Joesdad --- best pizza I ever tasted. They don't make it like that in South Jersey either.

Great pizza. I just started ordering from here again recently (post 07 flood). This was a real treat growing up.  Of course we didn't order out anywhere near as frequently as we do now!

Finally, something I can respond to!  Everything being discussed pre-dates my memory or existence!

Wasn't a better place to hang out at while in high school. We still have our class reunion eve get together dinner there before heading over to West Brook Inn for more drinks and socializing. Actually, that night is much better than the formal dinner outing the next night, but I digress.  And yes, the best pie anywhere. I brag about it all the time. One recent weekday afternoon, I decide to take my 7 year old Son there. All the way there I'm telling him how great the pizza is and that he'll never ever have a pie anywhere like the one he's going to have today. We arrived around 4 and the place is closed. What a disappointment. Haven't been able to get back since.

Mid 60's a whole Cheese Pie was a dollar plus 5 cents for the box. $1.05 take out. I remember as a kid late 50's maybe. (JoesDad's) Uncle Danny P. use to take me down to Chitches for a pie. Funny thing he would order his half with no cheese just the sauce. I never saw anyone eat Pizza that way to this day. His uncle Danny was a great guy. Alway bustin around with a joke.smile

Well I finally made it back to N.J this past weekend for my little Girls Wedding. We got in around 11pm FIRST STOP Chitch's. I walked up to the door and just as I turned the handle all the lights went out. I walked in and asked if they were closed ? Yes Mrs. Stan answered. I told her I had just drove 400 miles salavating awaiting my first sausage pie in a few years. She said "Sit Down" I will make the pie for you!! As I waited she said you look formiliar whats your name. I told her and she instantly remembered me and my whole Family. We chatted a bit while my pie was cooking and I realized I had been coming to Chitch's for over 50 YEARS WOW !! Once my pie came out of the oven I Thanked her and left. I made it to about the train station and the aroma got to me. I reached in the box and grabbed a slice. ALMOST HEAVEN it tasted exactly the same as I remembered it as a kid. By the time I arrived home 3 slices were GONE. My wife just laughed and said I hope you enjoyed every bite. She had 2 slces and I finished the rest. Can't wait for our next trip so I can do it again.

Can't believe you remember that!  Uncle Danny did not like any kind of cheese.  His sense of smell was so keen that cheese drove him nuts.  Same thing at home, no cheese on his, just sauce, tomato pie only!

I am a bit biased since it was my Grandmother's restaurant, started by my Grandfather Chitch but Chitch's still is the best pizza I have ever had.

 Hi
I LOVE CHITCHS. Was your Grandma the lady with the white hair who was cooking in the kitchen ? I also remember 'CHICK" the bartender. If I close my eyes I can see them both right now. Thanks for the memory. Dixie

p/s I live in Virginia now but whenever I go up to Jersey I make sure I stop at Chitchs.

I am willing to bet  you hold the secret to what makes a Chitches Pizza Pie taste so good. biggrin

Everyone has to admit Chitiches Pizza still tastes the same now in 2009 as it did back in the 60's.

Not sure I really even know the secret..it was my Grandfather Chitch recipe..i do know that some of it was that either my Dad or Aunt Chris made the dough fresh daily..Uncle Domninck shoped every day for fresh mushrooms, tomatos, etc..Jimmy the butcher supplied the ground sausage which was fried up daily Uncle Frankie kept the place ruuning. Vinny worked there for years and new how to do it.the gravy "sause" was made from crushed tomatoes, tomato paste, basil etc..a topping of garlic salt, black pepper and parmasian cheese was used on each pie..the mozzerella was cut from a block and put on by slice..all pies were top with a bit of olive oil..the ovens were at about 650 as I recall..just some thoughts..they still seem to make the pies the same way as last time i was in BB it still tasted great..

I use to love when there was extra dough and Dad would bring it home and we would have Pizzafrete (fried dough) for breakfast..I can close my eyes and remember the smell in the morning..of course by about 3 or 4th period in HS you would start to get the nods we all eat so much..nothing better than growing up in an Italian family..I even made gravy and meatballs today using my moms old recipes..can't wait for dinner tonight

hope this helps a bit...

Great reply Somm44. You probably have no idea what your grandfather had at one time or maybe you do by now. You probably could of had a chain of pizzeria's by now. I would say your grandfather had back in the day what the McDonald brothers had back in the day a unique idea and recipe. You could of been up there with Domino's and Papa John's and you know what your family had the better recipe by far.

Dixie Dude is back here in New Jersey for a few days as I write this post. I was invited to go to Chitches last night with him and a few other friends but had to decline being I had other things going on. Talked to Dixie later on last night and he said that Chitches is still the same but the pizza prices have really gone up from the last time he was there. He tells me that now a Cheese pie is $9.00 and a Sausage Pie is $12.00. Don't forget Chitches pies are on the small side about the size of a Medium pizza nowadays at other Pizzeria's.  He also mentioned that the place barely had any business Wednesday night when they got there at 8pm. He said from 8pm until closing they were the only business Chitches had. He said there wasn't even any takeouts going on. hmm I guess the recession is also hitting Chitches like many other restaurants around us.

I guess I'm going to have to go give Chitches a try again.. The Last two trips up to Jersery I have gone to Chimney Rock Inn.. The pizza there hasn't changed.. Growing up Chitches was PIZZA ... The only place my Dad would ever get pizza...I always liked Chitches, it wasn't until my late teens early 20's that I started going to Chimney Rock...We are coming up in November for a rew days then heading to Ohio to visit my wife's brother , and spend Thinksgiving with his Family.

Was In NJ this summer for a wedding and had a friend bring a pie (or 5) from Chitch's down. As i have said in the past I am biased but it is still the best. Up here in NH a good pizza is hard to find. My second favorite is cee cees..not sure if this is the right name on the Manasquan boardwalk. Hard to believe (or maybe it isn't based upon my family ties) but I have never had a Chimney Rock Pie

One thing for sure is the pizza here in Florida...SUCKS... I don't know why.. maybe something in the water?? It doesn't matter how many signs the pizza places put out front that say "NEW YORK STYLE PIZZA" they just can't get it right.. And Pizza Hut and Domino's just doesn't even count as pizza, they are crap...
When we come up in November, I'm going to hit both Chitches and Chimney Rock and just over dose myself on good old Bound Brook Pizza...
Oh and another thing missing here in Florida is a Bakery.. Same story as the Pizza...
Just try to find a butter cookie with the one end dipped in chocolate with the little sprinkles on it.. Thats something thing I stock up on when I come up there...lol

The Pizza here in Virginia also SUCKS. As Stone stated I was up in NJ last week for a couple of days and my brothers and me and a couple of others went to Chitches for a pie. It has always tastes the same to me just like when I was a kid. I will have to try Chimney Rock next time i'm up there. I heard there pie has the ground sausage like Chitches.   Dixie

Great memories!  Best pizza, nothing like it anywhere.  I heard many raves of Chimney Rocks pies and the Jersey shore pies (I thought the crust was like elephant skin), but nothing truly compares to Chitch’s pie, especially the sausage.

The place was always mobbed after any BBHS athletic event like basketball, football, wrestling, etc. You would have to wait outside for someone to leave and then you could enter.

I do remember Chick (belonged the Bound Brook Fire Department), Vinny (he was my sponsor for my confirmation), Frank Capano (many years in the BBFD), Mike Soma (I thought the family lived behind on Talmage Ave???) and many others that worked or hung around there.
After so many floods that have hit Bound Brook, are they still open?

Hey BBFD,

those were either my family or so closed you considered them family...Chick and Vinny had many a Sunday dinner with us...Uncle Frankie lived above Chitch's and was a great old character...can't tell you how many half smoked cigars we used to find downstairs among the kegs and liquor..and you are right he was a member of Engine #4 for many many years..the Mike Somma you remember was my Dad..also at least in my eyes a great man..honest, hard working, old school...I miss him everday
Peace

I agree with you that Chiches is the best. Living in Atlantic County for almost 23 years now, if I have the opportunity to be there after 4pm when they open, I try to have thier classic pizza. It's been relatively unchanged in all of these years. Why though does it seem so much smaller now. I walked in and said...damn, where is the seating area!!! A typical pizzeria I guess, but as kid and teenager, it seemed so much bigger! Even with the JukeBox gone, it's shrunk in size.

Welcome to the forum Stargazer.
Another thing is the pie is still the same size (SMALL) but with a taste that has never changed. Sausage & Cheese. Can't wait til my next trip up to N.J from here in Virginia

We still get Chitches now and then.  I've basically been getting pizza from here my entire life.  As good as the sausage is, though, my favorite is still the pepperoni.
